An excellent make-ahead dessert for parties, these lemon bars set up more if you chill them. Cover the dish with plastic wrap and refrigerate for up to 3 days before cutting into bars.

Variation | Orange Creamsicle Bars

Make and bake the crust as directed. Make the filling, replacing the lemon zest, lemon juice, and milk with 5 teaspoons grated orange zest, 3 teaspoons grated lemon zest, ¾ cup (180 ml) fresh orange juice, ⅓ cup (80 ml) heavy cream, and 1 teaspoon orange-flower water (optional). Pour the filling on top of the warm crust and bake as directed.
